Instructions:
Activate the Yeast
In a small bowl, mix the warm milk and a teaspoon of sugar. Sprinkle the yeast over it, stir gently, and let it sit for about 5 minutes until frothy.Make the Dough
In a large mixing bowl, combine flour, sugar, and salt. Add the activated yeast mixture and eggs. Mix until combined.Add Butter
Gradually add the softened butter cubes to the dough while mixing on low speed (if using a mixer). Knead for about 8-10 minutes until the dough is smooth, elastic, and pulls away from the sides of the bowl. The dough will be sticky but workable.First Rise
Place the dough in a greased bowl, cover with plastic wrap or a damp cloth, and let it rise in a warm place for about 1-2 hours, until it doubles in size.Shape the Brioche
On a floured surface, roll the dough into a rectangle. If adding filling, brush with melted butter and sprinkle the sugar-cinnamon mixture evenly over the dough. Roll it up tightly and cut it into desired shapes (rolls, twists, or leave as a loaf).Second Rise
Place the shaped dough in a greased baking pan or loaf tin, cover, and let it rise for 30-45 minutes until puffy.Bake
Preheat your oven to 350°F (175°C). Brush the dough with the beaten egg for a shiny finish. Bake for 25-30 minutes, or until golden brown on top.Cool and Serve
