Making Jam Doughnuts
Instructions
Prepare the Dough:
In a large bowl, mix together the flour, sugar, baking powder, salt, and nutmeg (if using).
In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until a dough forms. Do not overmix.
Shape the Doughnuts:
Turn the dough out onto a floured surface and knead gently until smooth (about 1 minute).
Roll out the dough to about 1/2 inch thick. Use a round cutter to cut out doughnut shapes (you can also use a larger cutter for the outer shape and a smaller one for the hole).
Gather and reroll the scraps to cut out additional doughnuts.
Fry the Doughnuts:
In a deep pot or a deep fryer, heat vegetable oil to 350°F (175°C).
Fry the doughnuts in batches, being careful not to overcrowd the pot. Fry for about 2-3 minutes on each side, or until golden brown.
Use a slotted spoon to remove the doughnuts and place them on paper towels to drain excess oil.
Fill the Doughnuts:
Once cooled slightly, use a piping bag or a small spoon to fill each doughnut with jam. You can insert the piping bag through the side of the doughnut for even filling.
Coat the Doughnuts:
Roll the filled doughnuts in granulated sugar while they are still warm. If desired, dust with powdered sugar as well.
Serve:

You can experiment with different flavors of jam or even use a cream filling if you prefer.
For a sweeter touch, drizzle icing over the top once the doughnuts have cooled completely.
